Corn Flour Baking Powder Bread or Rolls with or without Cheddar Cheese
Comments: This bread, calles 'mamaliga', is an essential basic food in the Balkans.
Even though it is optional, Cheddar cheese gives an excellent taste to this golden brown light bread.
It is important to bake the dough as soon as it is ready or baking powder will loose its effiency and the bread will not be as light.
Servings: 1 bread or 9 rolls

  • 2/3 cup [90 g] prepared flour [with baking powder]
  • 1 1/2 teaspoons [7.5 mL] baking powder
  • 3/4 cup [190 mL] corn flour
  • 1/2 teaspoon [2.5 mL] salt
  • 1 egg
  • 2/3 cup [160 mL] milk
  • 1/4 cup [60 g] finely grated Cheddar cheese [optional]
  • Preheat oven to 400°F [200°C].
  • Into a large bowl, well mix together prepared flour, baking powder, corn flour and salt.
  • Make a well in the middle.
  • Break in egg and pour in milk.
  • If desired, also add finely grated Cheddar cheese.
  • Using a wooden spoon, well mix together all the ingredients.
  • Pour dough into a greased 6-inch [15-cm] baking pan, or 9 greased muffin tins.
  • Bake into preheated oven for approximately 20 to 25 minutes, until risen, golden and firm to the touch.
  • Unmold onto a wire rack; leave to cool slightly before serving, warm.
