Southern-Style Corn Flour Rolls

  • 2 cups [500 mL] corn flour
  • 2 1/2 teaspoons [12.5 mL] baking powder
  • 1 teaspoon [5 mL] salt
  • 4 tablespoons [35 g] flour
  • 1 cup [250 mL] milk
  • 2 eggs
  • 2 tablespoons [30 mL] vegetable oil
  • Preheat oven to 425°F [220°C].
  • Into a bowl, mix together corn flour, baking powder, salt and flour.
  • Pour in milk, and mix.
  • Break in eggs and pour in vegetable oil.
  • Mix to just dampen dry ingredients.
  • Evenly spoon dough into 8 already greased or lined with paper cups muffin molds.
  • Bake into preheated oven, for 20 to 30 minutes.
