- 2 cups [500 mL] corn flour
- 2 1/2 teaspoons [12.5 mL] baking powder
- 1 teaspoon [5 mL] salt
- 4 tablespoons [35 g] flour
- 1 cup [250 mL] milk
- 2 eggs
- 2 tablespoons [30 mL] vegetable oil

- Preheat oven to 425°F [220°C].
- Into a bowl, mix together corn flour, baking powder, salt and flour.
- Pour in milk, and mix.
- Break in eggs and pour in vegetable oil.
- Mix to just dampen dry ingredients.
- Evenly spoon dough into 8 already greased or lined with paper cups muffin molds.
- Bake into preheated oven, for 20 to 30 minutes.
