- 1 pound [454 g] plain bean curd, ground
- 1 large carrot, finely ground [in grinder]
- 1 sweet green pepper, finely chopped
- 2 green onions, finely chopped
- 1 celery stalk, finely chopped
- 7 tablespoons [105 mL] mayonnaise [or more]
- 1/4 teaspoon [1 mL] pepper
- 1/8 teaspoon [0.5 mL] salt
- 1/2 teaspoon [2.5 mL] tarragon
- 1/4 teaspoon [1 mL] garlic powder

- Mix together ground bean curd and carrot, finely chopped green pepper, green onions and celery stalk, mayonnaise, pepper, salt, tarragon and garlic powder.
- If desired, mix in more mayonnaise, to desired texture.
- Refrigerate before serving, really cold.
