Tofu Spread

Comments: Serve over crackers.
  • 1 pound [454 g] plain bean curd, ground
  • 1 large carrot, finely ground [in grinder]
  • 1 sweet green pepper, finely chopped
  • 2 green onions, finely chopped
  • 1 celery stalk, finely chopped
  • 7 tablespoons [105 mL] mayonnaise [or more]
  • 1/4 teaspoon [1 mL] pepper
  • 1/8 teaspoon [0.5 mL] salt
  • 1/2 teaspoon [2.5 mL] tarragon
  • 1/4 teaspoon [1 mL] garlic powder
  • Mix together ground bean curd and carrot, finely chopped green pepper, green onions and celery stalk, mayonnaise, pepper, salt, tarragon and garlic powder.
  • If desired, mix in more mayonnaise, to desired texture.
  • Refrigerate before serving, really cold.
