Tofu Macaroni

Comments: Either use whole wheat or soy pasta.

  • 5 tablespons [75 mL] vegetable oil
  • 1 cup [250 mL] bean curd dices
  • 2 tablespoons [30 mL] soy sauce
  • 1/2 cup [125 mL] grated carrot
  • 1/2 cup [125 mL] blanched cauliflower flowerets
  • 1/4 cup [60 mL] blanched small broccoli flowerets
  • 4 cups [1 L] boiled macaroni noodles
  • Into a frypan, heat 3 tablespoons [45 mL] of vegetable oil; brown bean curd dices, then sprinkle with soy sauce.
  • Into a clean frypan, heat remaining vegetable oil; brown grated carrots, blanched cauliflower and broccoli flowerets for a few minutes, before mixing in bean curd dices.
  • Mix in boiled macaroni noodles; reheat.
  • Check for seasonings before serving.
