Spruce Beer

Comments: Instead of spruce gum, you can use the same quantity of essential spruce oil, but do not infuse.
It is very important to refrigerate spruce beer to avoid bursting.
Delicately open a bottle in the bottom of a sink, as fermentation means lots of pressure.
Servings: 8 cups [2 L]

  • 1 teaspoon [5 mL] active dry yeast
  • 1 cup [250 mL] sugar
  • 1 cup [250 mL] lukewarm water
  • 1 teaspoon [5 mL] natural spruce gum, crushed
  • 1 cup [250 mL] water
  • 6 cups [1.5 L] lukewarm water
  • Dissolve yeast and sugar into 1 cup [250 mL] lukewarm water, for 5 minutes.
  • To infuse, microwave spruce gum and 1 cup [250 mL] water for 2 minutes, at HIGH.
  • Pour both mixtures and remaining 6 cups [1.5 L] lukewarm water into a 64-ounce [1.8-L] plastic bottle.
  • Close, air-tight.
  • Leave to ferment, into a cool environment, for 3 days.
  • Refrigerate.
  • To serve, pour through a sieve, into a glass.
