- 1 1/2 cups [300 g] sugar
- 2 1/2 cups [625 mL] water
- 6 lemons
- 2 oranges
- Rind pieces of 1 orange
- 1 cup [250 mL] fresh mint leaves

- Mix then bring together sugar and water to a boil.
- Leave to boil for 5 minutes, remove from heat and leave to cool completely.
- Stir in lemon and orange juices.
- Add orange rinds.
- Pour mixture over fresh mint leaves.
- Leave to stand for at least 1 hour, preferably longer.
- Remove mint leaves.
- Refrigerate concentrate; mix before using.
