- 1 1/2 cups [300 g] sugar
- 2 1/2 cups [625 mL] water
- Juice of 6 lemons
- Juice of 2 oranges
- Grated rind of 1 orange
- 1 cup [250 mL] fresh mint leaves

- Bring sugar and water to a boil.
- Leave to boil for 5 minutes, remove from heat and leave to cool completely.
- Stir in lemon juice and orange juice, then grated orange rind.
- Arrange freh mint leaves into a large jar before pouring in liquid.
- Leave mixture to rest for at least 1 hour, preferably longer.
- Strain liquid to remove mint leaves.
- Refrigerate, or freeze fresh mint lemonade concentrate into 1/3-cup [80-mL] each containers.
