- 5 pounds [2.27 kg] McIntosh apples
- 2 cups [500 mL] apple cider
- 1 tablespoon [15 mL] cinnamon
- 1/2 teaspoon [2.5 mL] allspice
- 1 cup [250 mL] buckwheat [or other] honey

- Rinse and grossly chop apples.
- Arrange apple pieces into a casserole; pour in apple cider.
- Bring to a boil; cover and simmer until apple pieces are tender, for approximately 20 minutes, stirring and crushing apples from time to time.
- With the back of a spoon, press apples through a sieve to get applesauce.
- Puree applesauce into a food processor, unless you prefer a chunky applesauce.
- Pour applesauce back into casserole; mix in cinnamon and allspice
- Bring back to a boil, stirring from time to time; lower heat and slowly simmer for 30 minutes.
- Mix in buckwheat honey; slowly simmer for 30 minutes, until puree sticks to the spoon or is of desired consistency.
- Store into sterilized jars.
