Lobster Butter
Comments:	This butter can be used in lobster soups and sauces to give color and richness.
Ingredients	Preparation
Coral of 1 lobster coral 1/4 cup [60 g] butter	Clean, wipe, and force lobster coral through a fine sieve. Transfer into a mortar along with butter. Pound until well blended.
