English-Style Chocolate Bread
Comments: What is better in the afternoon than to relax drinking a good cup of tea and having a slice of bread specially when it is a slice of this English-style chocolate bread!
For a change, instead of adding dark chocolate chips, try adding milk chocolate chips, white chocolate chips, or a mixture of the three. Dried cranberries can also be added instead of raisins.

  • 3/4 cup [175 g] butter, softened
  • 3 1/2 ounces [100 g] unrefined light brown sugar [muscovado]
  • 4 eggs, slightly beaten
  • 4 ounces [227 g] dark chocolate chips
  • 1/2 cup [125 mL] raisins
  • 1/2 cup [125 mL] chopped nuts
  • Finely grated rind of 1 orange
  • 2 cups [280 g] self-rising flour
  • Preheat oven to 325°F [160°C].
  • Lightly grease a 2-pound [1-kg] bread pan; line bottom of pan with parchment.
  • Into a bowl, cream together softened butter and brown sugar until light and foamy.
  • Slowly pour in beaten eggs, beating well after each addition.
  • If mixture tends to separate, beat in 1 to 2 tablespoons [8.75 to 17.5 g] of the flour.
  • Mix in dark chocolate chips, raisins, chopped nuts and finely grated orange rind.
  • Sift then delicately fold flour into mixture.
  • Spoon dough into prepared pan; using the back of the spoon, lightly press into the centre of dough.
  • Bake bread into preheated for approximately 1 hour, until a toothpick comes out clean from its centre.
  • Leave bread to cool in pan for 5 minutes, before delicately unmolding bread onto a wire rack.
  • Remove parchment and leave bread to cool completely.
  • Serve bread, sliced into thin slices.
