Captain's Punch

Comments: The better the rum tastes, the better the punch will taste.
To make a large ice 'cube', freeze water into a large plastic container or into a tube cake pan; ice will take longer to melt.

  • 1 cup [250 mL] lemon juice
  • 4 cups [1 L] pineapple juice
  • 4 cups [1 L] orange juice
  • 3/4 cup [190 mL] pineapple chunks, with juice
  • 2 oranges, nicely cut
  • 5 ounces [150 mL] red Maraschino cherries, with juice
  • 3 cups [750 mL] spice amber rum or any other rum, to taste
  • Lots of ice cubes
  • Ice cubes with a cherry frozen inside the cubes [optional]
  • 2 1/2 cups [625 mL] ginger beer
  • Mix together lemon juice, pineapple juice, orange juice, pineapple chunks with juice, orange shapes and cherries with juice into a punch bowl.
  • Pour in rum; refrigerate for 1 hour, more for more taste.
  • Just before serving, add ice cubes [some plain and, if desired, some decorated with a cherry].
  • Pour in cold ginger beer, for a sparkling punch.
