- 4 medium-size potatoes
- 2 cups [500 mL] raisins
- 1 gallon [4.5 L] hot water
- 4 pounds [1.8 kg] sugar
- 3 cups [750 mL] barley
- 1 pack [1 tablespoon / 15 mL] active dry yeast

- Wash and cube potatoes [do not peel].
- Finely chop raisins.
- Pour hot water into a stoneware jar; dissolve sugar.
- Add barley, raisins and potato cubes.
- Leave to cool.
- Well mix in active dry yeast.
- Half close jar; leave to ferment into a warm environment for 15 days, stirring once, every day.
- Filter; set aside for 2 days.
- Siphon into sterilized bottles.
- Age before drinking.
- Keep into a cool evironment.
