- 1 cup [250 mL] raisins
- 4 pounds [1.8 kg] grated carrots
- 4 pounds [1.8 kg] sugar
- 2 lemons, sliced
- 2 oranges, sliced
- 1 gallon [4.5 L] water
- 1 [1/4-ounce / 7-g] package active dry yeast

- Finely chop raisins.
- Mix together all ingredients, into a stoneware jar; half close the jar.
- Leave to ferment into a warm environment for 40 days, stirring once a day.
- Filter twice.
- Leave to rest for 3 days.
- Siphon into sterilized bottles.
- Leave to rest before drinking.
- Keep into a cool environment.
