Carrot Wine

  • 1 cup [250 mL] raisins
  • 4 pounds [1.8 kg] grated carrots
  • 4 pounds [1.8 kg] sugar
  • 2 lemons, sliced
  • 2 oranges, sliced
  • 1 gallon [4.5 L] water
  • 1 [1/4-ounce / 7-g] package active dry yeast
  • Sterilized bottles
  • Finely chop raisins.
  • Mix together all ingredients, into a stoneware jar; half close the jar.
  • Leave to ferment into a warm environment for 40 days, stirring once a day.
  • Filter twice.
  • Leave to rest for 3 days.
  • Siphon into sterilized bottles.
  • Leave to rest before drinking.
  • Keep into a cool environment.
