Spanish Coffee

  • 1 slice lemon
  • Sugar
  • 3/4 ounce [22.5 mL] Cognac
  • 3/4 ounce [22.5 mL] Tia Maria
    or
    1/2 ounce [15 mL] Kahlua Liqueur
  • Really strong hot coffee
  • Lemon
  • 2 spoonfuls or more whipped cream
  • 1 stemmed glass
  • 1 napkin
  • 1 small spoon
  • Rub a slice of lemon all around the side of the glass; dip glass into sugar.
  • Caramelise to frost, using a burner.
  • Pour Cognac into the glass; flambe, rotating the glass to keep the flame going.
  • Slowly pour in Tia Maria or Kahlua.
  • Fill glass with hot coffee, up to 1 inch [2.5 cm] from the rim.
  • Top with whipped cream, to taste.
  • Wrap the glass into a napkin and serve, along with a small spoon.
