Soothing Maple-Flavored Coffee

  • 2 lemon wedges
  • 1 cup [250 mL] brown sugar
  • 3/4 cup [190 mL] Maple Liqueur
  • 6 tablespoons [90 mL] Cognac
  • 6 cups [1.5 L] really hot coffee
  • 2 cups [500 mL] whipped cream
  • Brown sugar
  • 6 heat-proof glasses
  • 6 napkins
  • Wet the rim of each glass with lemon wedges; dip glasses rims into brown sugar.
  • Into a saucepan, heat together Maple Liqueur and Cognac until just boiling; flambe if desired.
  • Pour mixture into a coffee pot, filled with very hot coffee [flame will stop instantly].
  • Stir.
  • Pour coffee into heat-proof glasses.
  • Garnish with whipped cream.
  • Sprinkle with brown sugar.
  • Arrange a napkin all around each glass and serve.
