Cafe au Lait Louisiana-Style

  • 24 ounces [720 mL] milk
  • 3/4 cup [150 g] sugar
  • 1 teaspoon [5 mL] vanilla extract
  • 24 ounces [720 mL] very strong coffee
  • Heat milk over medium heat; when it starts to boil, lower heat to stop boiling.
  • Slightly melt sugar into a 9 to 10-inch [22.5 to 25 cm] deep casserole [minimum].
  • When sugar is caramelized, pour in warm milk, being careful as milk could spatter.
  • Grate the bottom of the casserole; mixing remaining caramel into milk.
  • Stir in vanilla extract.
  • Pour milk into a heat-proof pitcher.
  • At the table, pour an equal quantity of milk and strong coffee into each cup.
