Cafe Brulot [Louisiane, USA]

  • 3 large sugar cubes
  • Peel from 1 orange, into 1 single strip
  • Lemon peel strips
  • 6 cloves
  • 2-inch [5 cm] cinnamon stick
  • 1/2 cup [125 mL] Cognac
  • 1/4 cup [60 mL] Curacao or other Orange Liqueur
  • 2 cups [500 mL] hot very strong black coffee
  • 1 table coffee-stove pot or cafe brulot mug
  • Preheat coffee stove to low heat.
  • Rub sugar cubes with orange peel; cut peel into strips.
  • Arrange orange and lemon peel strips, cloves, sugar cubes and cinnamon stick into coffee stove pot.
  • Lightly crush ingredients with the back of a spoon.
  • Pour in Cognac and Curacao or other orange liqueur; thouroughly stir.
  • When mixture is hot, flambe for a few seconds, stirring.
  • Slowly pour in hot coffee, until flames stop.
  • Serve immediately.
