Cranberry-Orange Cookies

  • 1 cup [200 g] sugar
  • 1/2 cup [125 mL] well-packed brown sugar
  • 1 cup [225 g] margarine or butter, softened
  • 1 teaspoon [5 mL] orange rind
  • 2 tablespoons [30 mL] orange juice
  • 1 egg
  • 2 1/2 cups [350 g] flour
  • 1/2 teaspoon [2.5 mL] baking soda
  • 1/2 teaspoon [2.5 mL] salt
  • 2 cups [500 mL] freshly coarsely chopped cranberries
  • 1/2 cup [125 mL] chopped nuts [optional]
Orange Glaze
  • 1 1/2 cups [375 mL] icing sugar
  • 3 tablespoons [45 mL] orange juice
  • 1/2 teaspoon [2.5 mL] grated orange rind
  • Preheat oven to 375°F [190°C].
  • Beat together sugar, brown sugar, margarine or butter, orange rind, orange juice and egg.
  • Stir in flour, baking soda, salt, chopped cranberries and, if desired, nuts.
  • Drop rounded spoonfuls mixture, about 2 inches [5 cm] apart, onto an ungreased cookie sheet.
  • Bake into preheated oven for 12 to 14 minutes, until lightly browned.
  • Transfer cookies onto a wire rack.
  • Cool completely.
  • Glaze each cookie with 1/2 teaspoon [2.5 mL] orange glaze.
Orange Glaze
  • Mix together icing sugar, orange juice and orange rind.
