- 1/2 cup [100 g] sugar
- 1 cup [225 g] butter or margarine
- 2 cups [280 g] sifted flour
- Sifted icing sugar [optional]

- Preheat oven to 300°F [150°C].
- Add sugar to butter or margarine beating until light and fluffy.
- Slowly knead in 1 3/4 cups [245 g] flour, reserving remaining flour for rolling surface.
- Gently roll-out dough, onto floured surface using a floured rolling pin, or pat down dough until 1/4 to 1/2-inch [6-mm to 1.3-cm] thick.
- Cut-out 42 cookies.
- Arrange onto an ungreased cookie sheet.
- Bake into preheated oven, for 30 to 35 minutes.
- Leave to cool slightly, then transfer onto wire racks; leave to cool completely.
- If desired, sprinkle cooled cookies with sifted icing sugar.
