Buttermilk Cookies

  • 2 cups [280 g] flour
  • 1/2 teaspoon [2.5 mL] salt
  • 1 teaspoon [5 mL] baking powder
  • 1/2 teaspoon [2.5 mL] baking soda
  • 1/4 cup [60 g] lard, shortening or butter
  • Approximately 3/4 cup [190 mL] buttermilk or sour cream
  • Combine flour, salt, baking powder and baking soda.
  • Cut in lard, shortening or butter, until mixture resembles cornmeal.
  • Add enough buttermilk or sour cream to get a rather soft dough.
  • Turn onto a floured surface; knead gently 5 or 6 times.
  • Roll-out dough gently until approximately 3/4-inch [2-cm] thick.
  • Cut-out rounds; arrange onto a greased baking sheet.
  • Bake into a preheated 425°F [220°C] oven for 15 to 28 minutes, until golden brown.
