Light Peanut Butter Cookies
Servings: 30 cookies
  • 3/4 cup [190 mL] light peanut butter
  • 1/4 cup [60 mL] soft margarine
  • 3/4 cup [190 mL] packed brown sugar
  • 1 egg
  • 3/4 cup [190 mL] 100% bran cereals
  • 3/4 cup [105 g] all-purpose flour
  • 1/2 teaspoon [2.5 mL] baking soda
  • Cream together peanut butter, margarine and brown sugar until smooth.
  • Blend in egg.
  • Grind bran cereals into a food processor or a blender for 20 to 30 seconds.
  • Stir in flour and baking soda.
  • Stir dry ingredients into peanut butter mixture.
  • Shape dough into 1-inch [2.5-cm] balls.
  • Arrange onto ungreased cookie sheets; flatten slightly with a fork.
  • Bake into a preheated 375°F [190°C] oven for 9 minutes.
  • Cool on rack.
