Scalloped Honey Cookies, Tart-Sweet Frosting

  • 1/2 cup [115 g] butter
  • 1/2 cup [125 mL] honey
  • 2 cups [280 g] sifted all-purpose flour
  • 1 teaspoon [5 mL] baking soda
  • 1/2 teaspoon [2.5 mL] cinnamon
  • 1/4 teaspoon [1 mL] ground clove
  • 1/4 teaspoon [1 mL] allspice
  • 1/4 cup [60 mL] crushed bran flakes cereals
Tart-Sweet Frosting
  • 1 cup [250 mL] icing sugar
  • 2 tablespoons [30 mL] honey
  • 2 teaspoons [10 mL] lemon juice
  • 1/2 teaspoon [2.5 mL] grated lemon peel
  • Cream together butter and honey.
  • Sift together flour, baking soda, cinnamon, ground clove and allspice; mix in crushed bran flakes cereals.
  • Combine dry ingredients with creamy mixture; chill for at least 1 hour.
  • Roll dough onto a lightly floured board unto 1/8-inch [3-mm] thick.
  • Cut dough using floured cookie cutter.
  • Bake into a preheated 350°F [180°C] oven, for 8 to 10 minutes.
  • Cool before spreading with tart-sweet frosting.
Tart-Sweet Frosting
  • Beat together icing sugar, honey, lemon juice and grated lemon peel until smooth.
