Honey Rolled Oat Chimes

  • 1 cup [225 g] butter
  • 1/2 cup [125 mL] honey
  • 1/2 cup [100 g] sugar
  • 1 egg
  • 1 teaspoon [5 mL] vanilla
  • 2/3 cup [90 g] sifted all-purpose flour
  • 1/2 teaspoon [2.5 mL] baking soda
  • 1/2 teaspoon [2.5 mL] baking powder
  • 1/4 teaspoon [1 mL] salt
  • 1 cup [250 mL] quick cooking rolled oats
  • 1 cup [250 mL] flaked coconut
  • 1/2 cup [125 mL] chopped almonds
  • Cream together butter, honey and sugar until light and fluffy.
  • Add egg and vanilla; beat well.
  • Sift together flour, baking soda, baking powder and salt; add to creamed mixture.
  • Stir in rolled oats, coconut flakes and chopped almonds.
  • Spread onto a greased 13 1/2 x 9-inch [34 x 23-cm] baking pan.
  • Bake into a preheated 350°F [180°C] oven, for 20 to 25 minutes.
  • Cool completely before cutting into 1 1/2 x 2 1/2-inch [4 x 6-cm] bars.
