Forest Rangers' Cookies

  • 1 cup [225 g] butter
  • 1 cup [200 g] sugar
  • 1 cup [250 mL] brown sugar
  • 2 eggs
  • 1 teaspoon [5 mL] vanilla
  • 2 cups [280 g] flour
  • 1 teaspoon [5 mL] baking powder
  • 1 teaspoon [5 mL] baking soda
  • 1/2 teaspoon [2.5 mL] salt
  • 2 cups [500 mL] rolled oats
  • 2 cups [500 mL] rice krispies
  • 2 cups [500 mL] coconut flakes
  • Cream together butter, sugar and brown sugar.
  • Beat in beaten eggs and vanilla.
  • Mix in flour, baking powder, baking soda and salt, already mixed together.
  • Then delicately fold in rolled oats, rice krispies and coconut flakes.
  • Drop teaspoonfuls [5 mL] mixture onto a cookie sheet; press down mounds with a fork.
  • Bake into a preheated 350°F [180°C] oven, for 10 to 15 minutes.
