Sea Foam Chews

  • 2 cups [280 g] flour
  • 2 teaspoons [10 mL] baking powder
  • 1 teaspoon [5 mL] baking soda
  • 1/2 teaspoon [2.5 mL] salt
  • 1/2 cup [100 g] sugar
  • 1 1/2 cup [375 L] brown sugar
  • 1/2 cup [115 g] shortening
  • 2 egg yolks
  • 1 teaspoon [5 mL] vanilla
  • 3 tablespoons [45 mL] milk
  • 1 [6-ounce / 170 g] chocolate chips
  • 2 egg whites
  • 3/4 cup [190 mL] chopped nuts
  • Preheat oven to 325°F [160°C].
  • Sift together flour, baking powder, baking soda and salt.
  • Cream together sugar, 1/2 cup [255 L] of brown sugar and shortening; add egg yolks, vanilla and milk to creamed mixture.
  • Mix in flour mixture.
  • Press dough into a 10 x 15-inch [25 x 38-cm] greased baking pan.
  • Sprinkle dough all over with chocolate chips; press into dough.
  • Into a clean bowl, beat egg whites until stiff.
  • Add remaining 1 cup [250 mL] brown sugar and beat until stiff.
  • Spread meringue all over dough, then sprinkle all over with chopped nuts.
  • Bake into preheated oven, for 30 to 35 minutes.
  • Leave to cool completely, onto a wire rack, before cutting into bars.
