Rolled Oat Chocolate Chip Nut Cookies

Sift flour before measuring it.

  • 1 1/2 cups [210 g] sifted flour
  • 1 teaspoon [5 mL] baking soda
  • 1 teaspoon [5 mL] salt
  • 1 cup [225 g] shortening
  • 3/4 cup [190 mL] brown sugar
  • 3/4 cup [150 g] sugar
  • 2 eggs
  • 1 cup [250 mL] hot water
  • 1 cup [250 mL] finely chopped nuts
  • 1 ounce [28 g] chocolate chips
  • 2 cups [500 mL] rolled oats
  • 1 teaspoon [5 mL] vanilla
  • Preheat oven to 375°F [190°C].
  • Sift together flour, baking soda and salt; set aside.
  • Cream shortening until light; slowly mix in brown sugar and sugar, until light.
  • Beat in eggs, one at a time, beating well after each addition.
  • Stir in hot water.
  • Well mix in reserved dry ingredients, nuts, chocolate chips, rolled oats and vanilla.
  • Drop mixture, 1/2 teaspoon [2.5 mL] at a time, approximately 1 inch [2.5 cm] apart, onto a greased cookie sheet.
  • Bake cookies into preheated oven for 8 to 10 minutes, until lightly browned.
