Rolled Oat Crunchies

  • 1 cup [140 g] sifted all-purpose flour
  • 1/2 cup [100 g] sugar
  • 1/2 teaspoon [2.5 mL] baking powder
  • 1/2 teaspoon [2.5 mL] baking soda
  • 1/4 teaspoon [1 mL] salt
  • 1/2 cup [125 mL] brown sugar
  • 1/2 cup [115 g] shortening
  • 1 egg
  • 1/4 teaspoon [1 mL[ vanilla
  • 3/4 cup [190 mL] quick-cooking rolled oats
  • 1/4 cup [60 mL] chopped walnuts [optional]
  • Sugar [to dip in cookie dough balls]
  • Preheat oven to 375°F [190°C].
  • Sift together flour, sugar, baking powder, baking soda and salt.
  • Add half [1/4 cup / 60 mL] of brown sugar, shortening, egg and vanilla.
  • Beat well.
  • Stir in rolled oats and chopped walnuts.
  • Shape mixture into small balls.
  • Dip dough balls into a little sugar.
  • Arrange dough balls apart, onto an ungreased baking sheet.
  • Bake into preheated oven for 10 to 12 minutes, until just golden.
  • Leave to cool for a few minutes, then transfer onto wire racks to cool completely.
