Animal-Shaped Cookies

  • 1/2 cup [125 mL] rolled oats
  • 2 teaspoons [10 mL] liquid honey
  • 1/8 to 1/4 teaspoon [0.5 to 1 mL] salt
  • 3/4 cup [105 g] flour
  • 1/4 teaspoon [1 mL] baking soda
  • 1/4 cup [60 g] butter
  • 4 tablespoons [60 mL] buttermilk
  • Preheat oven to 400°F [200°C].
  • Into a blender, finely grind rolled oats into a powder.
  • Transfer into a large mixing bowl.
  • Add honey, salt, flour and baking soda; stir to mix.
  • Cut in butter.
  • Pour in buttermilk and stir until a well-mixed, until mixture forms into a ball.
  • Thinly roll-out dough onto a floured board.
  • Cut dough using tiny animal cookie cutters; transfer apart onto a baking sheet.
  • Bake cookies into preheated oven until just golden, for 10 to 12 minutes.
  • Leave to harden slightly, then transfer cookies onto wire racks to cool completely.
