Mega Chocolate Mocha Doodles [Breakfast Cookies]

  • 1/4 cup [60 mL] coffee beans
  • 1/2 cup [125 mL] chocolate chips
  • 1 cup [250 mL] pancake mix
  • 2 tablespoons [30 mL] brown sugar
  • 2 teaspoons [10 mL] baking soda
  • 1 teaspoon [5 mL] salt
  • 1 cup [250 mL] frosted flakes cereals
  • 1 egg
  • 1/2 cup [125 mL] milk
  • Icing sugar, to sprinkle
  • Preheat oven to 350°F [180°C].
  • Grind coffee beans.
  • Into a small micorwave-safe bowl, mix together ground coffee beans and chocolate chips; microwave for 2 minutes, stir and reserve.
  • Into a large bowl, mix together pancake mix, brown sugar, baking soda, salt, frosted flakes, egg and milk.
  • Pour chocolate chips and ground coffee beans mixture into pancake mix mixture and stir together.
  • Grease a cookie sheet.
  • Shape dough [kind of runny] into 1/2 tablespoon ]7,5 mL] size balls.
  • Arrange apart onto greased cookie sheet.
  • Bake into preheated oven until done, until a toothpick poked into the center comes out clean.
  • Remove from oven, sprinkle with sifted icing sugar, and serve.
