Fresh Berry Oatmeal Cookies

Comments: For these cookies, use hulled fresh strawberry dices or any other fresh small berries.
Servings: At least 40 cookies
  • 1 cup [250 mL] packed brown sugar
  • 3/4 cup [150 g] sugar
  • 1 cup [225 g] softened butter
  • 1/2 cup [125 mL] water
  • 1 teaspoon [5 mL] almond extract
  • 2 eggs
  • 3 cups [420 g] flour
  • 2 cups [500 mL] rolled oats
  • 1 teaspoon [5 mL] baking soda
  • 1/2 teaspoon [2.5 mL] salt
  • 1/2 teaspoon [2.5 mL] cinnamon
  • 2 cups [500 mL] strawberry dices or berries
  • Preheat oven to 350°F [180°C].
  • Into a large bowl, beat together brown sugar, sugar and butter until creamy.
  • Well beat in water, almond extract and eggs.
  • Mix together flour, rolled oats, baking soda, salt and cinnamon
  • Add to first mixture stirring until well blended.
  • Delicately fold in strawberry dices or berries.
  • Drop spoonfuls of dough apart onto a greased or already lined with parchment cookie sheet.
  • Bake cookies into preheated oven for approximately 12 minutes, until golden.
  • Leave to cool slightly then transfer onto wire racks to cool completely.
