Lemony Raisin Cookies

  • 1 cup [225 g] margarine
  • 1 1/2 cups [300 g] sugar
  • 2 eggs
  • 2 teaspoons [10 mL] lemon extract
  • 3 1/2 cups [490 g] flour
  • 1 1/2 teaspoons [7.5 mL] cream of tartar
  • 1 1/2 teaspoons [7.5 mL] baking soda
  • 1/2 teaspoons [2.5 mL] salt
  • 2 cups [500 mL] raisins
  • Preheat oven to 400°F [200°C].
  • Cream together margarine, sugar, eggs and lemon extract.
  • Mix together flour, cream of tartar, baking soda, salt and raisins.
  • Really well mix dry ingredients into first mixture.
  • Drop dough, 1 teaspoon [5 mL] at a time, apart onto a greased baking sheet.
  • Using a fork, flatten dough into rounds.
  • Bake cookies into preheated oven for 8 to 10 minutes, until just golden all around, making sure not to overbake the cookies.
  • Transfer cookies onto wire racks; leave to cool completely.
  • Keep into airtight containers.
