- 1 cup [225 g] margarine
- 1 1/2 cups [300 g] sugar
- 2 eggs
- 2 teaspoons [10 mL] lemon extract
- 3 1/2 cups [490 g] flour
- 1 1/2 teaspoons [7.5 mL] cream of tartar
- 1 1/2 teaspoons [7.5 mL] baking soda
- 1/2 teaspoons [2.5 mL] salt
- 2 cups [500 mL] raisins

- Preheat oven to 400°F [200°C].
- Cream together margarine, sugar, eggs and lemon extract.
- Mix together flour, cream of tartar, baking soda, salt and raisins.
- Really well mix dry ingredients into first mixture.
- Drop dough, 1 teaspoon [5 mL] at a time, apart onto a greased baking sheet.
- Using a fork, flatten dough into rounds.
- Bake cookies into preheated oven for 8 to 10 minutes, until just golden all around, making sure not to overbake the cookies.
- Transfer cookies onto wire racks; leave to cool completely.
- Keep into airtight containers.
