- 1/2 cup [115 g] shortening
- 1 cup [250 mL] brown sugar
- 1/2 cup [100 g] sugar
- 1 egg
- 1 teaspoon [5 mL] vanilla
- 1 cup [250 mL] crushed into a puree boiled carrots
- 2 cups [280 g] sifted all-purpose flour
- 1/4 teaspoon [1 mL] salt
- 1 1/2 teaspoons [7.5 mL] baking soda
- 3/4 cup [190 mL] raisins
Orange Frosting
- 1 teaspoon [5 g] softened butter
- 1 1/2 cups [375 mL] icing sugar
- Approximately 2 tablespoons [30 mL] orange juice

- Preheat oven to 350°F [180°F].
- Using an electric beater, cream together shortening, brown sugar and sugar.
- Well mix in egg and vanilla, then carrot puree.
- Sift together sifted flour, salt and baking soda; mix in raisins.
- Mix dry ingredients mixture into creamy mixture.
- Drop spoonfuls of dough, apart onto a cookie sheet.
- Bake cookies into preheated oven for 12 to 15 minutes, according to the size of the cookies.
- Remove from oven and leave to cool slightly.
- Meanwhile, well beat together orange frosting softened butter and icing sugar, beating in some orange juice until of desired consistency.
- Frost slightly cooled cookies with orange frosting.
