Soft Carrot Cookies, Orange Frosting

  • 1/2 cup [115 g] shortening
  • 1 cup [250 mL] brown sugar
  • 1/2 cup [100 g] sugar
  • 1 egg
  • 1 teaspoon [5 mL] vanilla
  • 1 cup [250 mL] crushed into a puree boiled carrots
  • 2 cups [280 g] sifted all-purpose flour
  • 1/4 teaspoon [1 mL] salt
  • 1 1/2 teaspoons [7.5 mL] baking soda
  • 3/4 cup [190 mL] raisins
Orange Frosting
  • 1 teaspoon [5 g] softened butter
  • 1 1/2 cups [375 mL] icing sugar
  • Approximately 2 tablespoons [30 mL] orange juice
  • Preheat oven to 350°F [180°F].
  • Using an electric beater, cream together shortening, brown sugar and sugar.
  • Well mix in egg and vanilla, then carrot puree.
  • Sift together sifted flour, salt and baking soda; mix in raisins.
  • Mix dry ingredients mixture into creamy mixture.
  • Drop spoonfuls of dough, apart onto a cookie sheet.
  • Bake cookies into preheated oven for 12 to 15 minutes, according to the size of the cookies.
  • Remove from oven and leave to cool slightly.
  • Meanwhile, well beat together orange frosting softened butter and icing sugar, beating in some orange juice until of desired consistency.
  • Frost slightly cooled cookies with orange frosting.
