Pecan Praline Cookies

  • 16 ounces [454 g] butter, softened
  • 2 cups [500 mL] light brown sugar
  • 2 eggs, beaten
  • 1 teaspoon [5 mL] vanilla
  • 2 cups [280 g] flour
  • 1 teaspoon [5 mL] baking powder
  • Pinch of salt
  • 1 cup [250 mL] chopped pecans
  • Preheat oven to 325°F [160°C].
  • Into a bowl, beat together softened butter, brown sugar, beaten eggs and vanilla.
  • Into a clean bowl, mix together flour, baking powder and salt.
  • Slowly mix flour mixture into butter mixture.
  • Fold in chopped pecans.
  • Spoon mixture apart, onto a greased and floured cookie sheet.
  • Bake into preheated oven, for 15 to 18 minutes.
  • Leave to cool completely, before serving.
