Banana Rolled Oat Cookies
Comments: Once completely cooled, these can easily be frozen.

  • 3/4 cup [175 g] shortening
  • 1 cup [200 g] sugar
  • 1 egg
  • 1 cup [250 mL] crushed banana
  • 1 1/2 cups [210 g] flour
  • 1/2 teaspoon [2.5 mL] baking soda
  • 1/4 teaspoon [1 mL] nutmeg
  • 3/4 teaspoon [3.75 mL] cinnamon
  • 1 3/4 cups [440 mL] rolled oats
  • 1/2 cup [125 mL] finely chopped nuts
  • Preheat oven to 350°F [180°C].
  • Thoroughly cream together shortening and sugar.
  • Break in egg and beat well.
  • Mix in crushed bananas.
  • Sift together flour, baking soda, nutmeg and cinnamon.
  • Mix into first mixture.
  • Well mix in rolled oats and finely chopped nuts.
  • Drop dough, 1 teaspoonful [5 mL] at a time away from each other, onto an ungreased cookie sheet.
  • Bake into preheated oven, for 12 to 15 minutes.
  • Leave to cool slightly then transfer cookies onto wire racks; leave to cool completely.
