Honey Pecan Butter Balls

  • 1 cup [225 g] butter
  • 1/4 cup [60 mL] honey
  • 2 cups [280 g] sifted flour
  • 1/2 teaspoon [2.5 mL] salt
  • 2 teaspoons [10 mL] vanilla extract
  • 2 cups [500 mL] finely chopped pecans
  • Icing sugar
  • Preheat oven to 300°F [150°C].
  • Cream butter; slowly beat in honey, until well beaten.
  • Stir in sifted flour, salt and vanilla, until well mixed.
  • Mix in finely chopped pecans.
  • Shape mixture into 72 small balls.
  • Arrange dough balls onto a greased baking sheet.
  • Bake into preheated oven, for 40 to 45 minutes.
  • Roll still hot balls into icing sugar; arrange onto wire racks.
  • Leave to cool completely.
  • Roll balls once more in icing sugar, until completely coated.
