- 2 1/2 cups [350 g] all-purpose flour
- 1 1/2 teaspoons [7.5 mL] ground ginger
- 1 teaspoon [5 mL] baking soda
- 1 teaspoon [5 mL] allspice
- 1/2 teaspoon [2.5 mL] salt
- 1 1/2 cups [300 g] sugar
- 2 tablespoons [30 g] margarine, softened
- 1/2 cup [125 mL] applesauce
- 1/4 cup [60 mL] molasses
- Vegetable spray

- Preheat oven to 375°F [190°C].
- Spary a cookie sheet with vegetable spray.
- Into a medium bowl, mix together flour, ground ginger, baking soda, allspice and salt.
- Into a large bowl, beat together sugar and softened margarine at high speed of an electric beater until well combined.
- Whip in applesauce and molasses.
- Stir in flour mixture, stirring until just combined.
- Drop 1 tablespoon [5 mL] of dough at a time, 1 inch [5 cm] apart, onto greased cookie sheet.
- Lightly wet your fingers and lighlty flatten each mound.
- Bake cookies into preheated oven for approximately 12 to 15 minutes, until firm.
- Transfer cookies onto a wire racks; leave to cool completely.
