Ginger Applesauce Cookies

  • 2 1/2 cups [350 g] all-purpose flour
  • 1 1/2 teaspoons [7.5 mL] ground ginger
  • 1 teaspoon [5 mL] baking soda
  • 1 teaspoon [5 mL] allspice
  • 1/2 teaspoon [2.5 mL] salt
  • 1 1/2 cups [300 g] sugar
  • 2 tablespoons [30 g] margarine, softened
  • 1/2 cup [125 mL] applesauce
  • 1/4 cup [60 mL] molasses
  • Vegetable spray
  • Preheat oven to 375°F [190°C].
  • Spary a cookie sheet with vegetable spray.
  • Into a medium bowl, mix together flour, ground ginger, baking soda, allspice and salt.
  • Into a large bowl, beat together sugar and softened margarine at high speed of an electric beater until well combined.
  • Whip in applesauce and molasses.
  • Stir in flour mixture, stirring until just combined.
  • Drop 1 tablespoon [5 mL] of dough at a time, 1 inch [5 cm] apart, onto greased cookie sheet.
  • Lightly wet your fingers and lighlty flatten each mound.
  • Bake cookies into preheated oven for approximately 12 to 15 minutes, until firm.
  • Transfer cookies onto a wire racks; leave to cool completely.
