Almond Date or Prune Cookies

  • 2 1/2 cups [350 g] flour
  • 3/4 cup [190 mL] firmly packed brown sugar
  • 1/2 cup [100 g] sugar
  • 2 teaspoons [10 mL] cinnamon
  • 1/2 teaspoon [2.5 mL] baking soda
  • 1/2 teaspoon [2.5 mL] cream of tartar
  • 1 cup [225 g] margarine, softened
  • 1 tablespoon [15 mL] grated orange rind
  • 1 teaspoon [5 mL] vanilla
  • 1 egg
  • 1 cup [250 mL] chopped almonds
  • 1 cup [250 mL] chopped pitted dates, or prunes
  • Preheat oven to 350°F [180°C].
  • Into a large bowl, combine all ingredients except chopped almonds and dates or prunes.
  • Blend at low speed of an electric mixer, until well mixed and dough forms.
  • By hand, stir in chopped almonds and dates or prunes.
  • Shape dough into 1-inch [2.5-cm] balls; arrange 2 inches [5 cm] apart, onto ungreased cookie sheets.
  • Bake into preheated oven for approximately 12 to 15 minutes, until light golden brown around edges.
  • Leaves cookies to cool for 1 minute.
  • Transfer cookies onto wire racks, to cool completely.
