Chocolate Chunk Snowballs

  • 2 cups [500 mL] softened butter
  • 1 cup [250 mL] icing sugar
  • 3 1/2 cups [875 mL] all-purpose flour
  • 1/2 cup [125 mL] cornstarch
  • 6 [1-ounce / 28-g each] squares bittersweet chocolate, coarsely chopped
  • 1 cup [250 mL] toasted and coarsely chopped pecans
  • Icing sugar
  • Beat together softened butter and icing sugar, until light and fluffy.
  • Stir in flour and cornstarch; then stir in chopped chocolate and pecans.
  • Shape dough into 1-inch [2.5-cm] balls; transfer onto ungreased baking sheets.
  • Bake into a preheated 350°F [180°C] oven for 20 minutes, until lightly browned; cool.
  • Dust lightly with icing sugar.
  • Store into airtight container.
