Brown Sugar Caramel Chip Cookies

  • 1 cup [225 g] butter, at room temperature
  • 1 cup [200 g] sugar
  • 1 cup [250 mL] brown sugar
  • 2 eggs
  • 2 teaspoons [10 mL] vanilla
  • 2 1/2 cups [350 g] flour
  • 1/2 teaspoon [2.5 mL] salt
  • 1 teaspoon [5 mL] baking soda
  • 4 cups [1 L] rice krispies cereals
  • 2 cups [500 mL] caramel chips
  • Preheat oven to 350°F [180°C].
  • Into a large bowl, mix together butter, sugar and brown sugar at medium speed of an electric beater.
  • Beat in eggs and vanilla.
  • Add flour, salt and baking soda beating until really well blended.
  • Drop spoonfuls of dough onto a cookies sheet.
  • Bake cookies into preheated oven for approximately 12 to 15 minutes, until just golden.
  • Leave to cool slightly, then transfer onto wire racks to cool completely.
