Crunchy Almond Coconut Cookies

  • 1/2 cup [115 g] softened butter
  • 1/2 cup [125 mL] brown sugar
  • 1/4 cup [60 g] sugar
  • 1 egg, beaten
  • 1 teaspoon [5 mL] vanilla extract
  • 1 cup [140 g] all-purpose flour
  • 1/2 teaspoon [2.5 mL] baking powder
  • 1 pinch salt
  • 1 1/2 cups [375 mL] rolled oats
  • 2/3 cup [160 mL] grossly chopped almonds
  • 1/2 cup [125 mL] grated coconut
  • Preheat oven to 350°F [180°C].
  • Into a large bowl, at lwo speed of an electric beater, well mix together softened butter, brown sugar, sugar, beaten egg and vanilla.
  • Mix together flour, baking powder, salt and rolled oats before adding into first mixture; beat at low speed.
  • Add chopped almonds and grated coconut; mix using a fork.
  • Drop spoonfuls of dough 2 inches [5 cm] apart onto a greased cookie sheet.
  • Bake cookies into preheated oven for approximately 10 minutes, until golden.
  • Leave to cool for a few minutes, then transfer cookies onto a wire rack; leave to cool completely.
