Apple Scotch Pie

  • 1 pastry pie shell + lattice top
  • 1 1/2 cups [375 mL] brown sugar
  • 1 cup [250 mL] water
  • 2 teapoons [10 mL] cider vinegar
  • 4 cups [1 L] apple slices
  • 1 tablespoon [15 mL] flour
  • 1/8 teaspoon [0.5 mL] salt
  • 2 tablespoons [30 mL] butter
  • 1 teaspoon [5 mL] vanilla
Topping
  • 2 tablespoons [30 mL] flour
  • 2 tablespoons [30 mL] brown sugar
  • 2 tablespoons [30 mL] margarine or butter
  • Line a pie plate with pastry shell.
  • Bring together 3/4 cup [190 mL] brown sugar, water and cider vinegar to a boil.
  • Add apple slices; cover and simmer until tender.
  • Delicately remove apple slices; mix combined flour, salt and remaining sugar into syrup.
  • Cook, stirring, until thickened.
  • Stir in butter and vanilla.
  • Arrange apple slices into pie shell.
  • Crumble together all topping ingredients [flour, brown sugar and margarine or butter].
  • Sprinkle topping crumbs all over apple slices; make a lattice top.
  • Bake into a preheated 450°F [230°C] oven, for 12 minutes.
  • Lower oven temperature to 350°F [180°C]; bake for 12 to 15 minutes longer.
