- 8 tablespoons [120 mL] butter, at room temperature
- 3/4 cup [190 mL] sugar
- 2 eggs
- 1 cup [250 mL] all-purpose flour
- 1 teaspoon [5 mL] baking soda
- 1/2 teaspoon [2.5 mL] salt
- 1 cup [250 mL] whole-wheat flour
- 3 large ripen bananas, mashed
- 1 teaspoon [5 mL] vanilla
- 1/2 cup [125 mL] roughly chopped nuts

- Preheat oven to 350°F [180°C].
- Grease a 9 x 5 x 3-inch [23 x 13 x 7.5-cm] bread loaf pan.
- Cream together butter and sugar, until light and smooth.
- Add eggs, one at a time, beating well after each.
- Sift together flour, baking soda and salt.
- Mix in whole-wheat flour.
- Add flours mixture to butter/sugar mixture.
- Mix in mashed bananas, vanilla and chopped nuts.
- Pour into prepared pan.
- Bake bread into preheated oven, onto center rack, for 50 to 60 minutes, until a toothpick comes out clean from its center.
- Cool in pan for 10 minutes before unmolding onto a wire rack to cool completely.
