Apple Cinnamon Squares

Comments: Use McIntosh, Spartan or other cooking apples.
For a ligh cake, prepare as directed, except use only 1 egg and omit the oil.

Cake
  • 1 [8 4/5-ounce / 250-g] pack white cake mix
  • 2 eggs
  • 1/2 cup [125 mL] unsweetened applesauce
  • 1/4 cup [60 mL] cold water
  • 2 tablespoons [30 mL] vegetable oil
  • 1 1/2 teaspoons [7.5 mL] cinnamon
  • Grease
  • Flour
Topping
  • 1 medium-size peeled or unpeeled apple, cored and thinly sliced
  • 1/4 cup [60 mL] chopped walnuts or pecans
  • 2 tablespoons [30 mL] sugar
  • 1/2 teaspoon [2.5 mL] cinnamon
  • Grease the bottom of an 8-inch [20-cm] square pan; dust with flour.
  • Into a small bowl, beat together cake mix, eggs, applesauce, cold water, vegetable oil and cinnamon at low speed until moistened.
  • Beat at medium-high speed for 2 minutes.
  • Scrape bottom and sides of bowl.
  • Resume beating at medium-high speed for 2 minutes; pour into prepared pan.
  • Arrange apple slices over dough; sprinkle all over with chopped walnuts or pecans.
  • Combine sugar and cinnamon; sprinkle all over.
  • Bake into a preheated 350°F [180°C] oven for 35 to 40 minutes, until a toothpick comes out clean from its center.
  • Cool on rack, before cutting into squares.
