Blockbuster Rocky Road Brownies

Do not overbake; these brownies should be very moist in the center.
For one pan, half the recipe.
Freeze well.
  • 8 [1-ounce / 28-g each] squares unsweetened chocolate
  • 1 1/2 cups [375 mL] butter or margarine
  • 6 eggs
  • 3 cups [750 mL] sugar
  • 1 1/2 cups [375 mL] all-purpose flour
  • 1 tablespoon [15 mL] vanilla
  • 1 cup [250 mL] chopped walnuts
  • 2 cups [500 mL] miniature marshmallows
  • 1 [1-ounce / 28-g] square semi-sweet chocolate, melted
  • Melt together unsweetened chocolate squares and butter or margarine into the top part of a double-boiler, over hot water or into a microwave oven on medium, for 4 minutes; cool.
  • Beat eggs until lemon-colored.
  • Slowly add sugar, beating until thick, for approximately 3 minutes.
  • Stir in cooled melted chocolate and vanilla.
  • Fold in flour, until well combined.
  • Pour into 2 greased and floured 8-inch [20-cm] square pans.
  • Sprinkle all over with chopped walnuts.
  • Bake into a preheated 350°F [180°C] oven, for 35 to 40 minutes.
  • Sprinkle with miniature marsmallows.
  • Broil under preheated broiler, until golden brown.
  • Drizzle with melted semi-sweet chocolate square.
