Almond Cinnamon Bars

Bars
  • 1 1/2 cups [375 mL] all-purpose flour
  • 1 teaspoon [5 mL] cinnamon
  • 1 teaspoon [5 mL] grated lemon rind
  • 1/4 teaspoon [1 mL] salt
  • 1/2 cup [125 mL] packed brown sugar
  • 1/2 cup [125 mL] softened butter
  • 1 egg, separated
Almond Topping
  • 3 1/2 ounces [100 g] sliced almonds [1/2 cup / 125 mL]
  • 2 tablespoons [30 mL] sugar
  • 1/2 teaspoon [2.5 mL] cinnamon
  • Into a small bowl, combine flour, cinnamon, grated lemon rind and salt; set aside.
  • Into a medium bowl, using an electric mixer, beat together brown sugar, softened butter and egg yolk, until fluffy.
  • Slowly beat in flour mixture, until well combined.
  • Evenly pat mixture over base of a 9-inch [23-cm] square baking pan.
  • Brush evenly with egg white.
  • Into a small bowl, combine all topping ingredients [almond slices, sugar and cinnamon].
  • Sprinkle topping evenly over bars.
  • Bake into a preheated 350°F [180°C] oven for 25 to 30 minutes, until golden brown.
  • Cool in pan, before cutting into bars.
