Apple Almond Cake
Serving: 1 square 8-inch [20-cm] cake
  • 2 cups [280 g] flour
  • 3 tablespoons [45 g] sugar
  • 1 tablespoon [15 mL] baking powder
  • 1/2 teaspoon [2.5 mL] salt
  • 1/4 cup [60 g] softened shortening
  • 1 egg
  • 2/3 cup [160 mL] milk
Garnishings
  • 1 cup [250 mL] thin apple slices
  • 1/4 cup [60 mL] almond halves
  • 2 tablespoons [30 g] melted butter
  • 1/4 cup [60 g] sugar
  • 1/2 teaspoon [2.5 mL] cinnamon
  • 1/4 teaspoon [1 mL] nutmeg
  • Preheat oven to 400°F [200°C].
  • Into a bowl, sift together flour, sugar, baking powder and salt.
  • Cut in shortening, until mixture resembles large peas.
  • Into a clean bowl, beat together egg and milk; set aside.
  • Prepare and measure separately each garnishing ingredient; reserve.
  • Mix reserved egg/milk mixture into dry ingredients, until just moistened.
  • Pour dough into a square 8-inch [20-cm] pan.
  • Arrange apple slices and almond halves all over dough.
  • Mix together remaining garnishings ingredients [melted butter, sugar, cinnamon and nutmeg].
  • Sprinkle all over apple slices and almond halves.
  • Bake into preheated oven, for 30 to 35 minutes.
