Berries, Fruit Pieces or Beggar's Pudding

Comments: Excellent dough for strawberry, apple, blueberry and beggar's puddings. Can also be used to prepare up-side-down cakes.

  • 1 12 cups [210 g] cake flour
  • 1 pinch salt
  • 2 1/2 teaspoons [12.5 mL] baking powder
  • 1/2 cup [115 g] butter, at room temperature
  • 1 cup [200 g] sugar
  • 2 eggs
  • 1 teaspoon [5 mL] vanilla, or other flavoring to taste
  • 3/4 cup [190 mL] milk
  • Quite a few berries or peeled fruit pieces
    or
    a good quantity brown sugar/water mixture [beggar's pudding]
  • Preheat oven to 375°F [190°C].
  • Sift together cake flour, salt and baking powder; set aside.
  • Cream butter into a large bowl; beat in sugar, eggs and vanilla or other flavoring.
  • Beat well, until smooth.
  • Fold flour mixture, alternately with milk, into sugar/eggs mixture.
  • Generously cover the bottom of a medium-size deep baking pan with berries or peeled fruit pieces, or brown sugar/water mixture.
  • Spoon dough all over fruit pieces or drop spoonsfuls of dough into brown sugar/water mixture [beggar's pudding].
  • Bake into preheated oven, for approximately 30 minutes.
