Banana Chocolate Bread

  • 2 eggs, slightly beaten
  • 1 cup [250 mL] crushed ripe bananas [approximately 3]
  • 1/3 cup [80 mL] vegetable oil
  • 1/4 cup [60 mL] milk
  • 2 cups [280 g] flour
  • 1 cup [200 g] sugar
  • 2 teaspoons [10 mL] baking powder
  • 14 teaspoon [1 mL] salt
  • 8 [1-ounce / 28-g each] squares semi-sweet chocolate, into small pieces
  • 1/2 cup [125 mL] chopped nuts
  • 1/2 teaspoon [2.5 mL] cinnamon
  • 1/4 cup [60 mL] packed brown sugar
  • Preheat oven to 350°F [180°C].
  • Mix togehter beaten eggs, crushed bananas, vegetable oil and milk.
  • Mix in flour, sugar, baking powder and salt, until well combined.
  • Then mix in small chocolate pieces and chopped nuts.
  • Pour dough into a greased 9 x 5-inch [23 x 12.5-cm] bread pan.
  • Into a small bowl, mix together cinnamon and brown sugar; evenly sprinkle mixture all over dough.
  • Bake into preheated oven for 60 minutes.
  • Leave to cool for 10 minutes before unmolding onto a wire rack, to cool completely.
