Applesauce Cake

Servings: 1 [13 x 9 x 2-inch / 33 x 23 x 5-cm] cake
  • 1/2 cup [115 g] butter or margarine
  • 2 cups [400 g] sugar
  • 2 eggs
  • 2 1/2 cups [350 g] all-purpose flour
  • 1 1/2 teaspoons [7.5 mL] baking soda
  • 1 teaspoon [5 mL] salt
  • 1 teaspoon [5 mL] cinnamon
  • 1/2 teaspoon [2.5 mL] nutmeg
  • 1/4 teaspoon [1 mL] allspice
  • 1 1/2 cups [375 mL] applesauce
  • 1/2 cup [125 mL] raisins
  • 1/2 cup [125 mL] chopped nuts
  • Preheat oven to 350°F [180°C].
  • Grease and lightly flour a 13 x 9 x 2-inch [33 x 23 x 5-cm] baking pan.
  • Cream butter or margarine.
  • Add sugar, creaming mixture until light and fluffy.
  • Add eggs, one at a time, beating well after each addition.
  • Sift together flour, baking soda, salt, cinnamon, nutmeg and allspice.
  • Alternately with applesauce, add flour mixture to creamed mixture.
  • Stir in raisins and chopped nuts.
  • Evenly spoon batter into prepared pan.
  • Bake into preheated oven for approximately 45 minutes, until done.
  • Leave cake to cool in pan.
