Berry Pudding

Comments: Excellent using blueberries, or raspberries.
Servings: 4 to 6
  • 1 1/2 cups [240 g] cake and pastry flour
  • Pinch salt
  • 3 teaspoons [15 mL] baking powder
  • 1/3 cup [75 g] butter
  • 1 3/4 cup [350 g] sugar
  • 1 egg
  • 1/2 cup [125 mL] milk
  • 4 cups [1 L] cleaned fresh berries
  • Preheat oven to 350°F [180°C].
  • Sift together flour, salt and baking powder; set aside.
  • Into a large bowl, cream butter slowly beating in 3/4 cup [150 g] of the sugar.
  • Well beat in egg.
  • Alternately with milk, fold flour mixture into creamy butter mixture.
  • Butter a 6-cup [1.5-L] baking dish.
  • Mix together berries and remaining 1 cup [200 g] sugar.
  • Evenly arrange berries over the bottom of baking dish.
  • Evenly pour dough all over sweetened berries.
  • Bake into preheated oven for approximately 1 hour, until golden brown.
